Ingredients

  • 14 oz (400 g)edamame (in pods)
  • 1heaping teaspoon salt
  • 3–4 tablespoons water
  • 1 tablespoonmirin
  • 1 1/2-inch (about 4cm) piece garlic paste (or garlic powder)
  • 2/3 tablespoon (10 g)butter
  • 1/2 teaspoonor more soy sauce

Steps

    In a small bowl, mix together the water, mirin, and garlic paste (or powder). Adjust the amount of water as needed during cooking.

    Quickly rinse the edamame under water. Sprinkle with a little extra salt (not listed in ingredients) and rub to remove any dirt and fuzz. Rinse again, drain in a colander, and sprinkle the measured salt evenly over the edamame.

    Heat a skillet over medium heat. Spread the edamame evenly in the pan and sauté until the color deepens to a rich green. Add the water-mirin-garlic mixture, cover with a lid, and let steam.

    After about 3 minutes, remove the lid and check if the edamame is cooked through. Add the butter, drizzle the soy sauce around the edge of the pan, and toss everything together to coat evenly.

    Be careful not to overcook so the edamame stays firm. Let it get a little charred for extra flavor. (Let any excess liquid evaporate.)

    [For frozen edamame]
    Rinse the frozen edamame briefly under running water to thaw slightly, then cook as above. Use less salt and water, and you can skip the steaming—just sauté.
