Kid-Friendly School-Style Mapo Tofu

Ingredients: 1 block tofu (silken or firm); 1 clove fresh ginger; 7 oz ground pork (about 200 g); 1/2 stalk green onion; 1/2 carrot; 1 cup water (about 240 ml); 1 teaspoon Chinese chicken bouillon (like Wei-Pa or similar); 2 1/2 tablespoons miso; 1 teaspoon soy sauce; 1 teaspoon mirin; 1 tablespoon sugar; as needed Potato starch slurry,; 1 little sesame oil

1 blocktofu (silken or firm)
1 clovefresh ginger
7 ozground pork (about 200 g)
1/2 stalkgreen onion
1/2carrot
1 cupwater (about 240 ml)
1 teaspoonChinese chicken bouillon (like Wei-Pa or similar)
2 1/2 tablespoonsmiso
1 teaspoonsoy sauce
1 teaspoonmirin
1 tablespoonsugar

Steps

Finely chop the ginger, green onion, and carrot.

Cut the tofu into large cubes and place in a bowl. Pour enough hot water to cover and warm it up, then drain in a colander. (You can also use a microwave.)

Heat 1 tablespoon of oil in a frying pan. Sauté the ginger until fragrant, then add the ground pork, green onion, and carrot. Continue to cook.

Once the pork is cooked through, add the water, chicken bouillon, miso, soy sauce, mirin, and sugar. Simmer.

Add the tofu from step 2 and simmer briefly. Pour in the potato starch slurry around the edge to thicken. Finish with a drizzle of sesame oil.
