In this recipe, I used gigot chops.
Instead of garlic salt, I used garlic paste + salt.
Instead of corn starch, I use corn flour for frying.
also I skipped the 2nd time frying if I don't have time.

Ingredients

  1. Chicken / pork belly / Gigot chops (cut into bite size)
  2. 1red 1 yellow 1 green pepper (cut into bite size)
  3. 1yellow 1 red onion (cut about 3 layers into bite size)
  4. 1/2 canPineapple (cut into bite size)
  5. Corn Starch / Corn Flour (for Fying)
  6. 2 tbspGF all-purpose flour
  7. Marinate
  8. 1.5 tbspsoya sauce
  9. 1 tspgarlic salt / garlic paste + salt
  10. 1egg
  11. Sauce
  12. 6 tbspketchup
  13. 4 tbspbrown sugar
  14. 4 tbspvinegar
  15. 1 tbspcorn starch
  16. 1/2 tspsalt
  17. 4 tbspwater

Steps

  1. 1

    Marinate the meat. In a big bowl, move the meat on one side and add soya sauce and garlic salt to the other side before mixing them together.

    Once mixed, add egg on top and mix again and massage it for 30 sec.
    Set aside for about 30 mins or longer.

    Prepare the sauce, mix all ingredients thoroughly for about a min. Set aside.

  4. 4

    Back to the meat, add GF flour and mix thoroughly for 30 sec.

  5. 5

    Put corn starch in a plate, and coat all the meat individually, press them so the starch stick to the meat.

  6. 6

    Heat up the oil (just enough to cover the meat) in a wok. on medium heat, Deep fry the meat for about 8 mins. Don't stir the meat first, leave it for about 2 mins before stir them.

  7. 7

    Remove the meat from the wok, turn to high heat and deep fry the meat the 2nd time, for about 2 mins.

    Remove the meat and oil from the wok.

  9. 9

    In the same wok, add the veg (pepper, onions) into the wok cook for 1 min before adding the pineapples in. cook for another min and set aside.

    In the same wok, add 1 tbsp of oil and add the sauce and cook for 2-3 mins until it turn thick.

    Add the vegs and meat back into the wok, mix them around for about 3 mins.

    Serve with rice and garnish with coriander.

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
