Ingredients

Serves 4 servings
  • 4large potatoes
  • 1/2onion
  • Panko breadcrumbs (enough to cover the baking dish before toasting)
  • 5.3–7 oz ground beef and pork mix (150–200g)
  • 1 handfulshredded melting cheese
  • Salt and pepper, to taste

Steps

  1. 1

    Peel the potatoes, cut them into small pieces, and microwave for 5 minutes or until tender.

  2. 2

    Finely chop the onion. Sauté the onion and ground meat in a skillet, seasoning with salt and pepper.

  3. 3

    Toast the panko breadcrumbs in a skillet until golden brown, being careful not to burn them. Set aside.

  4. 4

    Mash the microwaved potatoes, then mix in the sautéed meat and onions. Spread this mixture in a heatproof baking dish and top with shredded cheese.

  5. 5

    Sprinkle the toasted panko evenly over the top, drizzle with olive oil, and toast in a toaster oven for about 5 minutes until golden.

    Scoop out as much as you like with a large spoon, add your favorite sauce, and enjoy!

  7. 7

    It tastes just like traditional croquettes.
