This is a Japanese-style Omi Champon, a popular local comfort food from Shiga Prefecture! It's packed with vegetables, budget-friendly, and very filling. Traditionally, it's enjoyed with a splash of vinegar to taste.

Steps

Tear the cabbage into bite-sized pieces and julienne the carrot.

Heat oil in a pot and sauté the vegetables and pork.

When the vegetables start to soften, add the water, dashi granules, and all the seasonings marked with ☆. Simmer.

Skim off any foam, taste, and adjust the flavor with salt and pepper. Add the lard at the end to finish the soup.

Make the soup a little stronger in flavor so it balances out when you add the noodles.

In a separate pot, cook the Chinese-style noodles. Serve the noodles in bowls and pour the soup over to finish!
