Our family makes pork stew using beef stew mix. It warms you up on a cold day.

The origin of this recipe: We've been making it with pork instead of beef for over ten years. Adding ketchup was something I saw on TV, though my memory is vague. I started adding consomme after trying a chicken soup curry recipe by Niisanpo (Recipe ID: 22980070) and thought consomme might work well in stew too.

Ingredients

Serves 4 servings
  • 10 1/2 ozpork block (this time shoulder roast), or your preferred pork
  • 2medium onions
  • 1medium carrot
  • 2medium potatoes
  • Broccoli, as needed (if available)
  • 5 cubesstore-bought beef stew mix (adjust to taste)
  • 2 1/2 cupswater (600 ml)
  • 1 tablespoonbutter (10 grams or more)
  • 1 teaspoonconsomme granules
  • 2 teaspoonsketchup
  • Coffee creamer or heavy cream, as needed (if available)

Steps

    This time, I used this type of pork and store-bought beef stew roux. Any pork you like is fine.

    Cut the carrot into chunks and the onion into wedges.

    Cut the potatoes slightly larger than the carrots and soak in water.

    Heat butter in a pot and sauté the pork, cut into bite-sized pieces, until browned. Be careful not to burn it. Recipe ID: 18780679 is handy.

    Add the carrots and onions, and sauté until the onions are tender.

    Add water and simmer, skimming off any scum. Cover with a lid.

    If adding broccoli, blanch it at this point.

    Once the carrots are tender, add the potatoes and continue to simmer, skimming off any scum.

    When the potatoes are tender, turn off the heat and dissolve the roux. Start with a small amount and adjust as needed. Simmer on low heat for 5 minutes.

    Taste and add consomme and ketchup gradually to your liking, then simmer on low heat for another 5 minutes.

    Serve on a plate, garnish with broccoli, and drizzle with heavy cream or coffee creamer if available.
