Secret Sukiyaki Sauce with Traditional Warishita Blend

This is an easy adaptation of the famous Imahan warishita blend (soy sauce: mirin: sugar: water = 4:3:2:1). You can quickly make delicious sukiyaki sauce at home with simple ingredients.
Recipe background:
Store-bought sukiyaki sauce is convenient, but I wanted to make a tasty, authentic version using pantry staples. I found the Asakusa Imahan warishita blend and made it a bit easier to prepare. This sauce is slightly sweet and mild, making it perfect for sukiyaki. My friends loved it too!

Ingredients

Serves 4–6 (makes about 2 cups/500 ml)
  • 3/4 cupsoy sauce (200 ml)
  • 2/3 cupmirin (150 ml)
  • 1/2 cupsugar (100 ml)
  • 3 1/2 tablespoonswater (50 ml)
  • About 1/10 oz dried kombu (for dashi) (3 g)

Steps

  1. 1

    Add the measured water to a pot and soak the rinsed dried kombu for at least 1 hour to make dashi before moving to the next step.

  2. 2

    Measure the sugar in a dry measuring cup and add it to the pot. Then measure and add the soy sauce and mirin.

  3. 3

    Place the pot over medium heat. Once it comes to a boil, remove the kombu. Let it simmer gently until the sugar dissolves. The sauce is ready.

  4. 4

    Add your sukiyaki ingredients to a pot, pour a thin layer of the sukiyaki sauce over them, and cook until the ingredients are tender and ready to eat.
