Pork chop, mashed potato and roasted veg

Ingredients

40 mins
  1. 1pork chop
  2. 6mushrooms
  3. 1Bell pepper
  4. 1onion
  5. 7New potatoes
  6. dashmilk
  7. tbspbutter
  8. olive oil
  9. 50 mlwhite wine
  10. 4 clovegarlic
  11. Salt and pepper
  12. 1balsamic glaze (optional)

Cooking Instructions

    Roughly chop pepper, onions, mushrooms and 3 garlic cloves in big chunks. Put in baking tray. Drizzle with olive oil, balsamic glaze and salt & pepper. Put in oven (200 degrees) for 30 mins.

    After veg has been in for 10 mins, Boil new potatoes in pan. Should take about 15 mins until they are soft.

    Meanwhile heat olive oil in a frying pan on medium heat. Rub salt and pepper into pork chop. Add chop to hot pan, add white wine (and an extra garlic clove if desired) to pan and fry for about 4 minutes each side for a standard sized chop. 5-6 mins each side for large chops.

    Whilst chop is cooking..Once potatoes are soft, drain from pan and transfer to mixing bowl. Add milk, butter, salt and pepper and start mashing.

    Transfer veg, mash and chop to plate, pour remaining wine/chop juice from pan over food.
