Ingredients

Serves 3-4 servings
  1. 250 gthinly sliced pork
  2. 2-3eggplants
  3. 10shiso leaves
  4. 2 tablespoonsplus a little more soy sauce
  5. 1 1/2 tablespoonssugar
  6. 2 tablespoonsmirin
  7. 2 tablespoonssake
  8. 1 cloveginger, grated
  9. 1 teaspooncornstarch
  10. Sesame seeds, to taste

Steps

  1. 1

    Thinly slice the shiso leaves. Make diagonal cuts in the eggplant, then cut into chunks and soak in water to remove bitterness. Mix the ingredients marked with ☆ together.

  2. 2

    Stir-fry the pork and set aside. Add more oil and stir-fry the eggplant. Once softened, wipe off excess oil and return the pork to the pan.

  3. 3

    Season with the ☆ mixture. Serve on a plate and top with sesame seeds and shiso leaves.
