Thinly slice the shiso leaves. Make diagonal cuts in the eggplant, then cut into chunks and soak in water to remove bitterness. Mix the ingredients marked with ☆ together.

Stir-fry the pork and set aside. Add more oil and stir-fry the eggplant. Once softened, wipe off excess oil and return the pork to the pan.

Season with the ☆ mixture. Serve on a plate and top with sesame seeds and shiso leaves.
