1 bagedamame (in pods)
1 tablespoonsalt (for prepping)
2 1/2 cupswater (600 ml) + 2 tablespoons salt (for brine)
2 tablespoonstoasted sesame oil
1/4-1/2 teaspoonsalt

Steps

Place the edamame in a colander and rinse with water. Sprinkle 1 tablespoon salt over the pods and rub them together to remove the fuzz. Rinse again to wash off the salt.

In a bowl, mix the water and 2 tablespoons salt until dissolved. Add the edamame and let soak for about 10 minutes.

Drain the edamame and pat dry. Place them in a skillet over high heat and cook for 5 minutes, turning occasionally, until lightly charred.

Drizzle with sesame oil, toss to coat evenly, then sprinkle with salt to finish.
