This one of my favorite meal since I was a child. I always asked my mom to make corn soup (chowder at that time) when I was sick.
Now my boys also love it!!

Ingredients

  1. 1-2onions
  2. 1-2potatoes
  3. 1 lbsfrozen corn
  4. 1/4Whole Nutmeg freshly ground
  5. 1/4 tspthyme
  6. 1/2 Tbspsalt
  7. Pepper (optional)
  8. 1/2 cupmilk

Cooking Instructions

  1. 1

    Cut onion and sauté with olive oil in a big pot until lightly caramelized (this makes the taste much sweeter)

    Cut potatoes and add in pot. Sauté for few minutes

  4. 4

    Add frozen corn and sauté

  5. 5

    Add water to till 1/2 inch above ingredients

  6. 6

    Add salt and nutmeg then boil till potatoes are cooked

  7. 7

    Add milk

  8. 8

    Move to blender/vitamix till smooth

  9. 9

    Adjust the taste with water, milk, cream, salt as you like.

  10. 10

    Enjoy!!!
