Recipe Background:
I used smoked ham, which is sometimes given as a summer gift, as a topping for Okinawa soba. The salty flavor of the ham pairs perfectly with the noodles.

This is a delicious ham made from pork shoulder.

Pour boiling water over the Okinawa soba noodles to remove excess oil, then drain well. Prepare a thin omelet and slice it.
