Measure out all the ingredients.

Cut the tip off a piping bag, fold it over twice, and secure it with a clip.

Place the piping bag in a cup to hold it open.

Separate the egg whites and yolks.

In a bowl, mix the egg yolks with the milk and rice flour until smooth and no lumps remain.

Preheat an electric griddle on low heat.

In another bowl, add lemon juice and sugar to the egg whites, then beat with a hand mixer until stiff peaks form.

Add a small amount of the meringue to the yolk mixture and mix well.

Pour the yolk mixture into the remaining meringue and gently fold together in a swirling motion.

Quickly transfer the batter into the piping bag.

Lightly oil the preheated griddle.

Pipe the batter onto the griddle in tall mounds. Add a small amount of water between the pancakes, cover with a lid, and steam-cook.

When the surface is dry, flip the pancakes. Using a damp spatula makes flipping easier.

Add a little more water and steam-cook again.

The pancakes are done when the sides don't stick to your fingers when touched.
