There are many types of fish cakes available at supermarkets or markets, but my husband prefers fish cakes with a chewy, crispy exterior and a moist, tender inside, which are different from the store-bought chewy ones. Sometimes I make them for him—it doesn’t take much time and they’re very delicious.

There are many types of fish cakes available at supermarkets or markets, but my husband prefers fish cakes with a chewy, crispy exterior and a moist, tender inside, which are different from the store-bought chewy ones. Sometimes I make them for him—it doesn’t take much time and they’re very delicious.

Cut the boneless tilapia fillets into small pieces. Place them in a food processor with the fish sauce, MSG, black pepper, and dill.

Blend the fish mixture until smooth, then mix well. Shape into round patties about 2 inches (5 cm) in diameter.

Heat a skillet over high heat. When the oil is hot, arrange the fish patties in the pan, leaving about 1/2 inch (1 cm) between each to prevent sticking.

Fry each side over medium heat until golden and cooked through. Do not overcook, or the crust will lose its chewy crispness and may become tough.

Remove the fish cakes to a plate and serve with a dipping sauce of fish sauce, lime juice, garlic, and chili.
