It also works if you use a muffin pan, then you end up with 12 banana muffins instead of one loaf :-) and I've been known to occasionally throw in a handful of lemon and orange peels (the ones that are already sweet)

Ingredients

8 servings
  1. 2 cupflour
  2. 1 cupsugar
  3. 3 largeripe bananas
  4. 120 gramsbutter or margarine
  5. 2eggs
  6. 2 tspbaking powder

Cooking Instructions

    Preheat oven to 180°C

    Mash the ripe bananas

  3. 3

    Cream the butter and sugar

  4. 4

    Stir the mashed bananas into the butter/sugar mixture

  5. 5

    Add the eggs to the mixture and mix

  6. 6

    Slowly add the flour and baking powder, until all the dry ingredients are well incorporated.

  7. 7

    Pour into a greased tin

  8. 8

    cook for 45 minutes at 180°C

I like simple dishes that are quick and tasty. I also tend to prefer one pot cooking, so there is less to wash!!My mother is Italian, my father is French and I live in South Africa, my meals are never predictable ;-)
