Sumikko Bento: Thick Rolled Omelet Sushi Character Bento

To give it a spring feel, I added flowers and used pink tapioca for a cute touch.
I used about 1 and 1/2 sheets of nori for this recipe.

I wanted to try making rolled sushi with fried shrimp tails♪
To give it a spring feel, I added flowers and used pink tapioca for a cute touch.
I used about 1 and 1/2 sheets of nori for this recipe.

Make the thick rolled omelet. Mix eggs, sugar, salt, granulated dashi, and water, then cook into a thick omelet. Make it slightly sweet and let it cool.

Make the "tapioca". Dilute red food coloring with water, add salt and MSG, then mix in cooked rice. Shape into small balls using plastic wrap and set aside.

Make the "grass". Cut the hanpen into thin slices, then cut the top in a zigzag pattern with scissors. Dilute green food coloring with water and soak the hanpen pieces in it.

Prepare the sushi rice using seasoned rice vinegar. Lay plastic wrap on your work surface, place 1 1/2 sheets of nori, spread the sushi rice evenly, and place the omelet from step 1 on top. Roll tightly using the plastic wrap.

For the shrimp tails, remove the white part from the red kamaboko and cut the red part into tail shapes using scissors. Make 6 pieces for 3 rolls.

Use a nori punch to cut out eyes and mouths from nori. Use flower-shaped cutters to cut flowers from the ham and sliced cheese, and use a straw or similar tool to cut out the centers.

Slice the sushi rolls from step 4. Remove the plastic wrap, wet your knife, and cut the rolls into even slices. (Wetting the knife helps make clean cuts.)

Attach the shrimp tails, eyes, and mouths from steps 5 and 6 to the sushi slices using mayonnaise. Arrange the tapioca and grass pieces as well.

Decorate with the flower cutouts for balance, and add your favorite side dishes or fruit to finish your bento!
