Slice the green onion into rounds. Thinly slice the onion and julienne the carrot. Cut the cabbage into strips about 1/4 inch (0.5 cm) wide.

Heat olive oil in a frying pan and sauté the green onion to make green onion oil.

Add the onion, carrot, and cabbage to the green onion oil and stir-fry.

When the vegetables are about halfway cooked, add the Yangnyeom sauce ingredients (grated garlic, oyster sauce, gochujang) and stir-fry.

Add the prepared shrimp and mirin, and stir-fry.

Briefly boil the udon noodles in boiling water, then drain well.

Add the udon noodles to the pan with the vegetables and shrimp, and stir-fry together.

Serve on a plate and top with sesame seeds and chopped green onion.
