You can easily make katsu curry at home, even if you suddenly crave it! Store-bought pork cutlets work just fine.

Finely chop the onion and add it to a pot with the oil. Sauté over medium heat.

Add salt, pepper, bay leaf, grated garlic, and grated ginger to the pot. Sauté until fragrant, then add the water. Simmer until the onion is soft.

Turn off the heat and add the curry roux. Let it sit for 1 minute, then stir to dissolve the roux completely. Simmer for 5 minutes and taste.

If needed, add Worcestershire sauce, ketchup, salt, pepper, or butter to adjust the flavor. Simmer briefly, then it's ready.
