Chocolate Souffle With An Orange Syrup

Heat oven to 180°C.

Snap the chocolate into a heat proof bowl, add the butter then place over a pan of gently simmering water untill smooth and melted. Remove from the heat and leave to cool for 15 minutes.

In a separate bowl, whisk the sugar and eggs untill thick and fluffy. Whisking constantly, tip the melted chocolate and butter into the sugar and eggs untill combined.

Divide he mixture between 6 separate oven proof teacups or ramekins then pour enough boiling water into a deep oven tray to cover half of the tea cups or ramekins.

Place the tray into the oven and bake for around 25 minutes.

Meanwhile, make the orange syrup by juicing 8 clementines, then sifted the juice into a saucepan pan. Add the sugar and bring to the boil. It will be ready once it has thickened and forming a thick coat on the back of your spoon.

Serve the souffle war!M with orange syrup and plain Greek yogurt.
