Falafel, a Middle Eastern speciality are deep fried balls made with protein-rich chickpeas and loaded with onions, garlic,few spices and herbs and stuffed with grated cheese that give a fantastic savory flavor. They are crunchy outside while soft and creamy inside.These balls are commonly served in a platter stuffed in pita bread, salad and with a tzatziki dip or hummus.

Soak chickpeas in sufficient water overnight.Next day drain water.Add the soaked chickpeas, onion, garlic, ginger paste.or chopped, green chillies, mint and coriander leaves in a mixer grinder. Process until the mixture is blended but not pureed.Remove the mixture to a bowl.Sprinkle gram flour and mix well.Add sesame seeds,cumin powder, chaat masala and garam masala powder. Add salt to taste.Add lemon juice, chilli flakes and black pepper powder.Mix all well.Refrigerate for an hour.

If needed add some more gram flour to hold the binding.Smear oil in both palms.Pinch lemon sized balls from the dough.Make a dent in the middle.Add grated cheese and close the ball. Smoothen the surface between both palms and slightly flatten them.Heat oil in a wok or frying pan and deep fry in batches till golden brown on all sides.Remove with a slotted spoon on a kitchen tissue lined plate.

Serve hot with hummus or Tsatziki dip.I served with Tzatziki dip.
