I love peanut butter, but have developed an allergy to it. Finally tried almond butter. I’ve had a hankering for some peanut butter cookies, and decided to try some Almond Butter cookies. Just switched out the peanut for almond. They’re pretty tasty! #globalcookpadgames2024

Ingredients

7-9 minutes
48 servings
  1. 1/2 cupgranulated sugar
  2. 1/2 cupbrown sugar, packed
  3. 1/2 cupbutter or margarine
  4. 1/2 cupalmond butter
  5. 1 tspvanilla extract
  6. 1egg
  7. 1-1/4 cupsall-purpose flour
  8. 1 tspbaking soda
  9. 1/2 tspsalt
  10. 4 Tbspgranulated sugar

Cooking Instructions

7-9 minutes
  1. 1

    Preheat oven to 375*.
    In large bowl, beat softened butter, and both sugars, until light and fluffy. Add almond butter, vanilla and egg until well blended. Scraping bowl through out mixing. Slowly beat in flour, baking soda, and salt until well combined.

    Using small cookie scoop, place on ungreased cookie sheet. With fork dipped in sugar, flatten balls in crisscross pattern.

    Bake 7-9 minutes or until set and golden brown. Immediately remove from cookie sheets. Store in airtight container.

I love to bake sweet stuff, with a bit of savory tasty cooking thrown into the mix. Just good ol’ southern cuisine. Most of my recipes were handed down from my Great & Grand Grannies. If they didn’t grow it or raise it, it wasn’t eaten. My hubby and I have alot of food allergies so it gets challenging sometimes to make things that we both can eat. Neither of us can eat shellfish, which is sad, considering where we live, cuz it’s everywhere! Y’all won’t find any shellfish /saltwater fish recipes here. Some fresh water fishes, maybe. Hope y’all enjoy my recipes!
