  1. 4eggs
  2. 1medium red onion
  3. 3tomatoes
  4. 4 tablespoonscassava flour (about 32 grams)
  5. 3 tablespoonsextra virgin olive oil
  6. Salt, to taste

  1. 1

    Finely dice the onion and tomatoes. Sauté them well in a small pot or saucepan.

    Once the vegetables are well sautéed, add the eggs and salt to taste. Mix well.

    Add the cassava flour, stir thoroughly, and cook until just tender—do not overcook. The mixture should remain slightly firm.

    Serve and enjoy. You can serve this with a piece of baguette bread.
