Ingredients

30 minutes
4 servings
  1. 1 tablespoonhoney
  2. 1-2 sprigsfresh thyme, optional
  3. 2 tablespoonsextra-virgin olive oil
  4. 1 (8 ounce)block of feta, preferably Greek, blotted dry
  5. Black pepper
  6. Sesame seeds, optional
  7. Pita bread, toasted and cut into wedges

Cooking Instructions

30 minutes
  1. 1

Combine honey and two sprigs of thyme. Microwave for 30 seconds. Let cool and set aside for a few hours or overnight.

  2. 2

Heat the oven to 400 degrees. Select a small oven-to-table earthenware dish or a small ovenproof sauté pan. Place the feta in the dish and cover with the olive oil. Bake until the cheese is soft and springy to the touch but not melted, about 8 minutes.

  3. 3

Heat the broiler. Remove thyme sprigs from honey and set aside. Reheat the honey in the microwave or over a pan of simmering water until it is fluid enough to be spread with a pastry brush, then paint the surface of the feta with it. Broil until the top of the cheese browns and just starts to bubble. Decorate with the thyme sprigs, if desired. Season to taste with black pepper and sesame seeds. Serve immediately with pita wedges..
