This recipe was given to me by my sister. She is a vegetarian and eats very healthy, which led her to find ways to make and enjoy delicious foods while keeping them nutritious. In her search, she created this recipe that doesn't require any kind of flour.

Slice the banana and place it in a blender with a little water (just enough so the banana blends smoothly, but not so much that it covers the banana).

In a bowl or any container you have, mix the egg, ground oats, and the blended banana. Stir until the mixture is smooth. You can use a fork or a whisk—this doesn't take long.

Once the batter is ready, you can add other ingredients if you like. I usually add a little bit of queso fresco, cut into small cubes, to give it a slightly salty flavor, but they're delicious even without cheese.

Heat a nonstick skillet over medium-low heat and add a little olive oil. Pour some of the batter into the pan. When bubbles start to form on the surface, flip the pancake. Usually, it takes up to 3 minutes (if the pancake is a bit thick) for it to be ready to serve.

That's it! Your banana pancakes are ready. After serving, you can add sauces or fruit (or both if you like). My sister, for example, serves them with Greek yogurt, but you can get creative—they go well with both sweet and savory toppings.
