Stovetop Stew Over Ziti Rigati

Ingredients

12 people
  1. Stew
  2. 4 poundssmall white potatoes
  3. 1 poundcarrots
  4. 3 poundsground chuck
  5. 1large vildaia onion
  6. 1 teaspoonrubbed sage
  7. 1 teaspoongranulated garlic powder
  8. As neededsalt
  9. 1 teaspoonground black pepper
  10. 2/3 cupall purpose flour
  11. 1-2/3 cupbeef broth
  12. Pasta
  13. 1 poundziti rigati
  14. As neededwater to boil pasta
  15. 1 tablespoonsalt for pasta water
  16. 2 tablespoonsvegetable oil for pasta water

Cooking Instructions

    Start browning the beef with the chopped onions, and salt. Wash and chop the potatoes. Season the potatoes with a bit of salt. Coat all the pieces. Add to the browned beef.

    Peel and slice the carrots on a bias. Add the beef and potatoes. Stir together and add the seasonings.

    When the potatoes are fork tender add the butter and allow to melt. Add the flour and stir gently in allow it to cook for 7 minutes.

    Pour the beef broth and allow to thicken. Gently stirring often.

    As the stew is cooking boil the pasta water ingredients. When the water is boiling add in the pasta. Cook as instructed on the package. Drain the pasta when it's done. Melt the butter in the pot stir in the drained pasta completely coating the pasta with butter.
