Ingredients

  1. 2.2 lbspork chuck steak (diezmillo de cerdo)
  2. 1/2white onion
  3. 10California chiles (seeds removed)
  4. 5arbol chiles
  5. 6garlic cloves
  6. 1 cupboiling water (240 ml)
  7. 1/4 stickcinnamon
  8. 2bay leaves
  9. 2whole cloves
  10. 5whole black peppercorns
  11. 1/2 cupapple cider vinegar (120 ml)
  12. Salt, to taste
  13. Salsa
  14. 1/2red onion (thinly sliced)
  15. 1 bunchcilantro (finely chopped)
  16. 2habanero peppers (thinly sliced)
  17. 4radishes (grated)
  18. 5limes (juiced)
  19. 4 slicescanned pineapple (diced small)
  20. Salt, to taste
  21. Black pepper, to taste

    Toast the California and arbol chiles in a skillet for about 3-5 minutes.

    Place the chiles in a bowl and add the boiling water, onion, and garlic, making sure everything is well submerged.

    Toast the black peppercorns, cinnamon, bay leaves, and cloves in a skillet for about 3-4 minutes, then add them to the chiles.

    Once the chiles are well soaked, transfer them to a blender along with the soaking water and 1/2 cup apple cider vinegar. Blend until smooth.

    In another bowl, season the pork steaks with salt on both sides.

    Pour the blended marinade over the pork and mix well so all the pieces are thoroughly coated (wear gloves).

    Let the pork marinate to absorb the flavors.

    Grill the pork in a skillet or over charcoal if possible.
