I made a delightful discovery about my new city: the stalls in the local market are overflowing with fresh vegetables and fruits. What caught my eye the most was the vast variety of fruit. Among the usual fruits were various berries that I normally would not find in my old place unless I was willing to travel very far and pay an arm and a leg.

The other day, during an aimless drive up the mountains, I found baskets filled with small, golden treasures wrapped in delicate, papery husks. I knew I had to get my hands on these husk cherries, or gooseberries as some call them. What I thought was a hidden gem is not really a hidden gem around here. It is simply one of the many gifts of Chawe Mountain.

I call these sun-kissed berries, and what better way to pair their sweetness and tanginess than with lemon in a torte cake. #GlobalChallenge

Ingredients

  • Topping
  • 2 cfresh gooseberries (aka husk cherries)
  • 1 tsplemon juice
  • 1 tspmixed spice
  • 1 Tbspbrown sugar
  • Wet Ingredients
  • 1/2 cmargarine or butter
  • 1/2-1 csugar
  • 2eggs
  • Dry Ingredients
  • 1 ccake flour
  • 1 tspbaking powder
  • Pinchsalt
  • Zest of one medium lemon

Steps

    Preheat the oven to 180°and line an 8-inch round pan. To easily take out the torte from the pan, use a springfoam pan if available

  2. 2

    In a bowl, sift all dry ingredients together. Whisk in the lemon zest and set aside for later

  3. 3

    In another bowl, cream butter and sugar until light and fluffy. Whisk in the eggs, one at a time, until fully incorporated

  4. 4

    Mix dry mixture into the wet mixture, just until combined

  5. 5

    Transfer batter into the prepared pan and smooth the top. In a small bowl, mix the berries, sugar, cinnamon, and lemon juice. Pour over the batter and gently press the fruit into the batter

    Bake for 45 minutes or until browned at the top. Cool cake on a rack and serve warm or chilled

We call them physalis or cape gooseberries. Aren’t they fabulous?! Crunchy, juicy, sour yet sweet. Last for ages if kept in the fridge. I love them.
