Arunachal Pradesh Style Jackfruit Potato Curry

To begin, cut the jackfruit into bite-sized pieces. Boil it in water with a teaspoon of salt and ½ tsp turmeric powder until tender. Or pressure cook it for one whistle. Drain well and keep aside.

Heat mustard oil to the smoking point and let it cool a bit. Add in the diced potatoes. Saute and cook until they are almost done. Remove and keep aside.

In the same oil, add a bay leaf with the panch phoran (mustard seeds, fennel seeds, cumin seeds, fenugreek seeds, and nigella seeds) and let it crackle.

Add in the chopped onions with green chillies and saute until translucent.

Add the ginger garlic paste and saute for a minute.

Next, add the chopped tomatoes with salt. Saute until the tomatoes are softened.

Now add in dry masalas – Kashmiri red chili powder, turmeric powder, and coriander powder. Mix well and saute until you can see the oil appearing on the sides. Add a bit of water if required.

Add in the boiled jackfruit pieces and the potatoes. Mix until well-coated.

Add a bit of water. Cover with a lid and cook for a few minutes so that the jackfruit and potatoes soak in the masala.

Finish with garam masala powder and 2 tbsp chopped green coriander leaves. Adjust the gravy as per your taste. I prefer the semi-dry version. Check the salt and add more if required.

The Arunachal Pradesh Style Jackfruit Potato Curry to serve. Serve hot with boiled rice.
