Esquites are simply corn kernels that are cooked and seasoned. They're very common to find outside churches in Mexico, served from large pots with the corn already cooked. They're served in insulated cups of different sizes, depending on the price, and you can customize them to your taste. A delicious Mexican classic.

Cut the kernels off the corn cobs, rinse under running water, and cook them with the epazote and salt in plenty of water. Cover and simmer for about 20 minutes, or until the corn is tender but not overcooked.

Once cooked, serve the corn in glass bowls or insulated cups, or any container you like, with some of the cooking liquid (about halfway up).

Add lime juice, a teaspoon of mayonnaise, sprinkle with cheese and chili powder to taste.
