Steps

Firstly scrap the karelas lightly and slit from centre length wise. Apply salt and leave for about 2-3 hours. Then wash and squeeze out well.

Take all the dry masalas and mix together. Add some water in it to make a crumble like texture to fill into the karelas. Fill into the karelas and tie with thread all around.

Take the oil in a kadhai and add some jeera. Then add the stuffed karelas and cover with lid. Cook on slow flame.. turning in between till cooked and gets a nice colour. Remove draining out the extra oil in the kadhai.

Now in the remaining oil.. add the potato wedges and cover and cook till done.

Remove the potatoes and in the same kadhai add the sliced onions and cook on slow heat covered and golden in colour. Don't worry if no oil is left there in it.. coz the onions will be cooked in their own steam.

Now remove the thread from the karelas and add in the onions along with the potatoes. Season as per your taste with some salt(this is for the potatoes and the onions). Mix well and serve with some dal and chappattis👍😊
