Egyptian Breakfast - Ful Medames

Ful Medamus is a breakfast eaten and enjoyed in Cairo since time immemorial. It’s a healthy and nutritious meal not restricted as a breakfast. But it’s enjoyed as a Breakfast for sure. Its main ingredient is Ful or Fava beans. Mashed and cooked with any spices one prefers. I used cumin, coriander and red chilli powder, a bit of lime juice and rock salt. Combined with boiled egg, falaphel for sure which has Fava beans also and bread.

Ingredients

Prep -24 hrs, Cooking time-50 mins
3-4 servings
  1. For Ful Medamus
  2. 1 cupFava beans
  3. 1 tspred chilli powder
  4. 1 tspcumin powder
  5. 1 tspcoriander powder
  6. 1/2 tspcumin seeds
  7. 3-4garlic cloves minced
  8. Rock salt as per taste
  9. 1 Tbsplime juice
  10. 1 Tbspolive oil
  11. For Falaphel
  12. 1 sprigcoriander leaves
  13. 1 sprigmint keaves
  14. 2-3garlic cloves minced
  15. 1/2size medium onion sliced
  16. 1/4 cupFava beans
  17. 1 tspcumin powder
  18. 1 tspcoriander powder
  19. 1 tspred chilli powder
  20. Salt as per taste
  21. 3-4 Tbspolive oil
  22. Garnish with chopped parsley, chopped tomato and served with Bread

Steps

Prep -24 hrs, Cooking time-50 mins
  1. 1

    For Ful Medamus - Boil Fava beans on medium flame until mostly done, drain and set aside the water and coarsely crush the beans, set aside

    In a wok heat olive oil, add garlic minced and cumin seeds, stir for 1-2 seconds, add coarsely crushed Fava beans

    Add cumin powder, coriander powder, red chilli powder and rock salt and stir well, add water and cook on medium flame for 5 mins, set aside

    For Falaphel - in a blender add coriander leaves, mint leaves, add sliced onion and minced garlic and blend coarsely

    Add boiled chickpeas and Fava beans and blend coarsely

    Add cumin powder, coriander powder, red chilli powder and salt and blend coarsely

    Make Patty and coat with sesame seeds on both sides

    In a wok heat olive oil and fry the falaphel for 5 mins on low flame, should be fried from outside and soft inside, set aside

    Plate with Fava beans, drizzle lime juice, add sliced boiled egg, top with falaphel, add breads on the sides and garnish with chopped tomato and parsley
