Heat oil in a pan. To it add a teaspoon of cumin or mustard seeds or a mix of both. Also add chopped garlic, asafoetida and curry leaves. Now add chopped onions and saute. After a minute or so, add all the 3 coloured bell peppers.

Saute until the raw smell fades away. To it add sambar masala and salt. Salt can be adjusted later on as well. Don't forget to add a little bit of chilli powder or fresh one's if required. I didn't add any. My homemade sambar masala is already spicy accordingly.

Add freshly cooked rice or leftovers. It is absolutely fine. Both the ways it is tasty and flavourful. Serve it as it is with a dash of clarified butter or ghee and some pickle. Enjoy!
