Special masala paste: combine all the ingredients and grind coarsely without using water. This paste can be stored in the fridge for a week or two.

Prepare veggies. Heat oil. Crackle mustard. Add potatoes. Fry them till they are almost cooked. They'll look slightly crisp and feel that if cooked further, they'll scorch. DO NOT CLOSE THE LID AT ANY TIME.

Add onions at this point and fry till they are almost crisp. Add turmeric powder, masala paste, salt. Mix well and saute for a minute. Add Cabbage and combine.

Cook for 3-4 minutes without the lid in case you like crunchy cabbage. If you like soft cabbage, cover the lid and cook till they are cooked. Add tomatoes and the remaining powder spices. Add coriendar leaves and spring onions.

Combine well. Cook till the tomatoes are cooked well.
