Ingredients

Serves 4 servings
  • Beef shank or beef short ribs, 1.3 lbs (600g)
  • 1/2-1carrot
  • 1daikon radish
  • 1/2 cuprice wine (about 120 ml)
  • 1/2onion
  • 3 slicesginger
  • 10 1/2 cupswater (2500 ml)
  • Salt, to taste

  1. 1

    Cut the beef into chunks and blanch in boiling water.

    Cut the carrot, daikon, and onion into chunks.

    Place all ingredients in a pot. If using a rice cooker, add 3 rice cups of water to the outer pot.

  4. 4

    While the beef soup is almost done, boil water to blanch some vegetables and cook the noodles separately. Set aside.

  5. 5

    Season the beef soup with salt to taste, then add the cooked noodles and vegetables. Serve.
