I usually make the braised version, so I wanted to try making the clear broth style this time.

Cut the beef into chunks and blanch in boiling water.

Cut the carrot, daikon, and onion into chunks.

Place all ingredients in a pot. If using a rice cooker, add 3 rice cups of water to the outer pot.

While the beef soup is almost done, boil water to blanch some vegetables and cook the noodles separately. Set aside.
- 5
Season the beef soup with salt to taste, then add the cooked noodles and vegetables. Serve.
