This soup is perfect for summer—refreshing and naturally sweet.

Pick the tender watercress leaves and wash thoroughly. Cut the silken tofu into pieces. Bring a pot of water to a boil, add the ground pork, and skim off any foam. Add the watercress and stir gently.

Season to taste, then gently add the tofu pieces. Let the soup simmer for a few more minutes, then turn off the heat and sprinkle black pepper on top.
