Dungri - Bateta Nu Bharelu (stuffed) Shaak (Kathiyawadi lunch)

Kathiyawadi subjis are supposed to be really spicy & hot . As vegetables are scarce in Gujarat / Saurashtra during summer, a lot of va in miriety are made using onion & baby potatoes . And this is a Dhabba Style vegetable that goes very well with puris , chapati & rice . Do try this flavourful vegetable this season.......

Wash & peel the baby potatoes. Make slits on them & keep them in salted water. The same way peel the baby onions, & make slits on them. Keep aside.

Mix all the masala paste ingredients & keep aside. Slowly press the masala in the dent, taking care that the potatoes & onions don't break. Keep them intact.

Heat 2 tsp oil in a pressure cooker, add mustard seeds. When the seeds splutter, add cumin seeds & saute. Add the stuffed potatoes & onions 2-3 tsp of water. Add tomato puree. Cook for 1 whistle only.

Once the air is released from the pressure cooker,open it. Cook the vegetables for 2-3 minutes, till potatoes are tender & oil is released. Add a little salt. (Onions don't take long to cook). Serve the hot, spicy vegetable garnished with coriander.

Serve dungli - batata nu Shak with chapati, Paratha or rice.
