Paanta Bhaat or overnight rice fermented and enjoyed with various sides be it veg or non veg is a pure Bengali comfort food. Many Bengali’s have it specially Bangals have it a lot in comparison to Ghoti’s.
I made with Peyazi, Bori Bhaaja, Aloo sedho o Begun bhorta

Paanta Bhaat or overnight rice fermented and enjoyed with various sides be it veg or non veg is a pure Bengali comfort food. Many Bengali’s have it specially Bangals have it a lot in comparison to Ghoti’s.
I made with Peyazi, Bori Bhaaja, Aloo sedho o Begun bhorta
Steps

For rice - in a bowl have fermented Gobindobhog rice which has 1” of water.

For Begun Bhorta - roast the begun, with slits and inserting garlic cloves, cool to peel the skin and mash

Add chopped green chillies, salt, chopped onions and mash well.

For Aloo sedho - boil the potatoes, cool and peel, mash, add chopped onions and green chillies, little mustard oil and salt. Mash well

For Peyazi - in a bowl add Besan, water, yoghurt, rice flour, sliced onion, salt, chopped green chillies and mix well.
Heat mustard oil in wok and add the Peyazi, fry on medium flame golden and set aside

For Bori - in a wok heat mustard oil and add the Bori and fry, set aside

Assemble - enjoy 😊
