Quinoa with Apple, Apricot, and Pistachio

Many years ago, Gordon Ramsey’s Hell’s Kitchen restaurant in Las Vegas had a red quinoa salad on the menu that was extremely similar to this. We loved it so much, that I tracked down a recipe online after we returned from our vacation. The restaurant currently has a different quinoa salad on their menu, but I’m so glad I have this recipe. It’s so delicious and is a great meal or side dish option in the Fall.

Quinoa with Apple, Apricot, and Pistachio

Ingredients

~20 minutes
10 to 12 servings
  1. 2 cupsquinoa (red quinoa is best, but any variety will work)
  2. 1Honeycrisp apple, cut into chunks
  3. 6 ouncesdried apricots, each cut into fourths
  4. 4 ouncesgoat cheese
  5. 1-2 cupspistachios
  6. Vinaigrette ingredients
  7. Juice from half a lemon (about 2 Tablespoons)
  8. 1/2 cupolive oil
  9. 2 tablespoonshoney
  10. 1/4 cupapple cider vinegar
  11. 1 teaspoonsalt
  12. 1/4 teaspoonpepper

Cooking Instructions

    Gather your ingredients.

    Rinse the quinoa really well. Cook it according to the package directions.

    Meanwhile, cut the apricots into fourths and soak them in boiling water for about 5 minutes.
    Drain and set aside.

    While the quinoa is still warm, toss in
    the apricots.

    Cut the apple into small chunks. There is no need to peel it, but you can if you want to.

    Add the apples and pistachios to the quinoa.

    Whisk together the vinaigrette ingredients in a small bowl, then add to the quinoa, and stir gently.

    Finally, cut or crumble the goat cheese, add it to the quinoa, and stir gently to combine everything.
    I couldn’t wait for the quinoa to cool down, so I added the cheese and it melted a little bit. I didn’t mind because it made the quinoa a little creamy. 😋

    The quinoa can be served cold. You can eat it on its own, but I often like to add shredded rotisserie chicken.
