Ingredients

  1. 1/4 cupCollard or Turnip greens, rinsed and chopped
  2. 1Tomato, diced
  3. 1/3Zucchini or Cucumber
  4. 3 tbspLemon or Lime juice
  5. 1/4 smallpurple or yellow onion, diced
  6. 1/3 cupQuinoa, cooked
  7. 1Salt and pepper to taste

  1. 1

    Cook collard greens and onions by simmering in shallow water for about 10 minutes

  2. 2

    Chop zucchini and halve the slices

  3. 3

    Combine all other ingredients and toss

  4. 4

    Sprinkle with salt and pepper as desired

  5. 5
