Combine the dough ingredients and knead well. Divide into small balls and let them rest while you prepare the chicken shawarma.

Slice the chicken and onion. Place them in a skillet, add oil, and sauté until the chicken is cooked. Sprinkle with sumac, black pepper, cumin, vinegar, lemon zest, and garlic. Stir well and cook until the mixture is well seasoned.

Heat a griddle or skillet over the stove and brush with oil. Roll out the dough and cook on the griddle, flipping until lightly cooked. Do not let the bread brown too much; just a light golden color so it stays soft.

Once the bread and chicken shawarma are ready, prepare the filling.

Spread mayonnaise on the bread, add a spoonful of chicken, lettuce, tomato slices, and fried potatoes. Roll it up and set aside. Repeat until all are done.

Heat the griddle again and place the sandwiches on it to get a golden color. Remove, cut, and enjoy!
