Keto Zucchini Fritters with Almond Flour & Shredded Cheese

Zucchini fritters are usually made with flour and feta, but this is a keto-friendly alternative. (Feta, like all cheeses, is fine for keto, but since there’s already plenty of cheese in this recipe to bind the fritters, I think adding feta would be too much.)

Keto Zucchini Fritters with Almond Flour & Shredded Cheese

Cut off the tough ends of the zucchini stems and, if you like, peel them. Grate the zucchinis and sprinkle with salt. Let them sit in a colander for 15 minutes. Then squeeze them very well (using towels or cheesecloth) to remove as much liquid as possible! Pat dry with paper towels.

Once the zucchini is ready, mix it with all the other ingredients. Chill the mixture in the refrigerator for at least 40 minutes. After chilling, shape the mixture into 10 fritters and refrigerate again for at least another 40 minutes.

Line a plate with paper towels. Heat oil over medium-low heat. Carefully fry each fritter on both sides until golden, being patient. Place them on the paper towels. Serve immediately. You can serve with any of the optional toppings.

Notes:
For ingredients with a range (like 1 1/2 to 2 cups almond flour), start with the smaller amount and add more after chilling if needed.
I found these taste even better after a few hours in the fridge (I reheated them briefly in the microwave).
