Another raita recipe. A little upgrade from the previous one. We make this often. We like it thick, addding freshly chopped mints, it's Refreshing! This salad is served as a side dish and pairs well with most Indian food, grilled meat/chicken, stir fry meat/poultry/games, curries and spicy dishes.

Cut cucumbers. Remove or core the middle part of the cucumber or the cucumber seed using a spoon.

Dice cucumbers (see pic) and place in a mixing bowl. Sprinkle 1 tsp of salt, mix evenly and leave aside for maybe 15-20mins to draw out excess water. Salting cucumber keep the yogurt or the dressing thick not watered down.
While that's happening, prep the greens and red onion.

Start by cutting/chopping coriander and mints. Peel & chop the onion as well. See pic below for reference.
Place the mint, coriander & red onion in a mixing bowl.

By now, your cucumber should be ready. Discard excess liquid. Give them a good squeeze. Rinsing is not needed. Add the cucumber to a mixing bowl (with mints, coriander & onion).

Add yogurt.

Add seasonings; white pepper powder, garam masala, chicken seasoning powder or chicken bouillon & lemon juice. Combine & toss. Taste and adjust seasonings accordingly. We dont usually add salt but feel free to add salt to your taste.

Best served cold. This Pairs well with most Indian food, grilled meat/chicken, stir fry meat/poultry/games, curries and hot dishes.
