I was looking for a delicious breakfast when short on ingredients, I used a Burrito tortilla to serve multiple people but take down the ingredients by a little if you're making it smaller.

I was looking for a delicious breakfast when short on ingredients, I used a Burrito tortilla to serve multiple people but take down the ingredients by a little if you're making it smaller.

Ingredients

15 minutes
2-4 people
  1. 1burrito size tortilla
  2. 3-4Cage free large eggs
  3. 1Bell pepper
  4. Halfa Zucchini
  5. Halfplus a little Onion
  6. 1stock of celery
  7. 2 clovesgarlic
  8. Ham or bacon to taste (optional)
  9. Teaspoonblack pepper
  10. Large pinch of salt
  11. 3-4 leavesfresh Basil and parsley
  12. Shredded cheese (optional)

Cooking Instructions

15 minutes
  1. 1

    Chop and dice the Vegetables, Basil, and parsley.

  2. 2

    Heat the pan on medium heat and put a generous amount of oil on the pan.

  3. 3

    If you like your eggs less cooked skip this step and put them straight on the tortilla.

    Crack the eggs straight onto the pan and break the yolks with a spatula once cooked to your liking, scrape them onto the tortilla.

    Refresh the oil on pan and put egg and tortilla on pan with the cheese

  5. 5

    Put the vegetables and seasonings on top of the egg

  6. 6

    Check to see crispyness of tortilla once golden brown, flip one side on top of the other like an omelet and serve!

    Tips: Serve with hot sauce, sour creme or anything you like!
