My best-ever Tortilla omelet

I was looking for a delicious breakfast when short on ingredients, I used a Burrito tortilla to serve multiple people but take down the ingredients by a little if you're making it smaller.

I was looking for a delicious breakfast when short on ingredients, I used a Burrito tortilla to serve multiple people but take down the ingredients by a little if you're making it smaller.
Cooking Instructions

Chop and dice the Vegetables, Basil, and parsley.

Heat the pan on medium heat and put a generous amount of oil on the pan.
- 3
If you like your eggs less cooked skip this step and put them straight on the tortilla.
Crack the eggs straight onto the pan and break the yolks with a spatula once cooked to your liking, scrape them onto the tortilla.

Refresh the oil on pan and put egg and tortilla on pan with the cheese
- 5
Put the vegetables and seasonings on top of the egg
- 6
Check to see crispyness of tortilla once golden brown, flip one side on top of the other like an omelet and serve!

Tips: Serve with hot sauce, sour creme or anything you like!

I started out making these in my toaster oven I've obtain a nice torch and have been crisping my tortillas first then adding the ingredients and melting the cheese with the torch it's a little bit quicker. And with my Weber grill I have a pizza stone pizza oven convert system on it and is it good when I make it with oak it comes out slightly smoky so so good we cannot get enough of them we actually have grilled pizza night everybody picks ingredients throws it together and I start pumping them out of the grill there small light and you could eat a few of them no problem so we usually cut them in fours and share them to experience it of everyone's creations. I want to eat a Spanish Omelet!But I only had a couple eggs in the fridge.I used dashi-flavored eggs as inspiration when dealing with this conflict.Slicing the potato into strips adds more volume to the dish!When you're cooking it, slowly steam cook it over low heat.
