Ingredients

Serves 1 serving
  1. 1-1 1/2 tablespoonsfish sauce (15-22 ml)
  2. 1 teaspoonsalt (5 grams)
  3. 7-8 medium raw shrimp, peeled and cleaned
  4. 1 handful straw mushrooms (about 3.5 ounces or 100 grams)
  5. 3 shallots
  6. 1 lime
  7. 5-6 fresh Thai chilies
  8. A small amount each of galangal, lemongrass, and kaffir lime leaves

    Wash and peel the shrimp, then clean them thoroughly. Pound the chilies and prepare the vegetables.

  2. 2

    Bring a moderate amount of water to a boil and add the salt. Once boiling, briefly blanch the shrimp heads and shells to make a broth, then remove and set aside.

  3. 3

    Add all the Tom Yum herbs (galangal, lemongrass, kaffir lime leaves), chilies, and shallots to the pot.

  4. 4

    When the herbs are fragrant and boiling, add the mushrooms. Season with fish sauce and lime juice, then add the cleaned shrimp.

  5. 5

    Wait until the shrimp are cooked through, stir, and serve.
