I made this dish with some leftover summer squash and zucchini from my friends garden and some leftover chicken breasts. Even my family loved it 😊
Summer Chicken and Noodles
I made this dish with some leftover summer squash and zucchini from my friends garden and some leftover chicken breasts. Even my family loved it 😊

Preheat oven to 350°F.
In a large pot or skillet add butter, chicken, and veggies. Fry on medium high heat til chicken and veggies are cooked through. Add in rest of ingredients except cheeses. Stir to combine. Bring to a boil, stirring occasionally. Once boiling turn heat down to medium low, cover and let simmer til noodles are tender and cooked through, stirring occasionally. - 2
Once done add half the shredded cheese and give a stir. Taste to see if you need add anymore seasonings. Pour mixture into a nonstick baking dish. Top with rest of the cheese and grated parmesan cheese. Bake in oven til cheese is melted and dish is heated through bout 20 minutes or so. Remove from oven and enjoy immediately or let rest for 10 minutes til sauce thickens up a bit. Enjoy 😋.
