California Farm White Tea Infusion with dried fruits & raisins

We grow Taiwanese Ding Dong Oolong tea in the kitchen window and collect fresh green leaves, tips and buds to make white tea. For this infusion, I added dried blueberries and dried Muskat grape Sultana raisins and steeped them in near boiling water of 160F degree water, tasted them after six hours and eleven hours.

Ingredients

  • 6 cupsnear boiling water, 160F degrees. Any hotter and the white tea turns bitter
  • 12 teaspoonsfresh green tealeaves, Ding Dong Oolong, 24 grams total
  • 35 gramsdried Sultana raisins
    California Farm Shine Muscat Grape Raisins
  • 70 gramsdried blueberries, or apples, or plums
    California Farm Blueberry Fruit Leather and Sun Drying
  • Equipment: cheesecloth teabag for loose tea, tea cosy to keep teapot hot, 6 cup porcelain teapot, laser thermometer
  • Cost: farm-free: white tea, raisins, blueberries, plums, apples, home grown

Steps

  1. 1

    In large six cup porcelain tea pot, steep 12 tea spoons green tea leaves 7 minutes in cheesecloth in 160F degree near boiling water to make white tea, remove. Save leaves to reuse two or three more times, adding 10F degrees each time to the water temperature.

    Add 35 grams of dried white Muscat Sultana raisins.

    Add 70 grams of dried blueberry leather or other dried fruits

    Cover teapot with tea cozy to keep hot overnight, steep six hours. After six hours, the infusion was still warm at 91F degrees. After 11 hours, flavors and colors were still intensifying.

    All three flavors are fresh and not bitter and noticeable in this drink, the mild white tea, the sweet raisin flavor, and the fresh fruity blueberry. A very refreshing summer drink. On the left is the drink after six hours of infusion. On the right, same drink, after 11 hours. The darker purple colors take longer. The flavor becomes more intense too, more fruity. The tea itself is still warm in the pot under the tea cozy after eleven hours, 87F degrees.

    The leftover raisins and blueberries swell up when being infused and make a great breakfast with thick greek yoghurt. Enjoy.
