Ingredients

350°F (180°C) for 40 to 50 minutes
8 to 12 servings
  • 2 1/3 cupsself-rising flour (about 300 grams)
  • 2 teaspoonsbaking powder (about 10 grams)
  • 1 cupsugar (about 200 grams)
  • 1/2 cupmilk (about 120 ml; I use powdered milk)
  • 1egg
  • 5 tablespoonsoil
  • 2caps vanilla extract or zest from a citrus fruit
  • For the pastry cream (budget-friendly and makes plenty)
  • 1 cupmilk (about 250 ml; I use powdered milk)
  • 1egg
  • 1/2 cupsugar (about 100 grams)
  • 1/3 cupall-purpose flour (about 40 grams)
  • 1 tablespoonvanilla extract or zest from a citrus fruit
  • Steps for the pastry cream
  • Combine everything in a small saucepan over low heat, stirring gently. Once it comes to a boil, cook for a few more minutes, stirring constantly
  • Let cool and use with a piping bag. (If you don't have a piping bag, you can use a small plastic bag and cut the tip to pipe lines over the cake.)

350°F (180°C) for 40 to 50 minutes

    For the torta matera:
    Combine all the dry ingredients (measured carefully): flour, sugar, and baking powder.
    Then add all the wet ingredients: oil, egg, and milk.

    Tip:
    You can use milk made from powdered milk, or substitute 1/2 cup (120 ml) orange or tangerine juice (in this case, zest is optional to enhance the flavor, and adjust the amount of powdered milk accordingly).
    Mix everything together and pour into a greased baking pan. Set aside.

  3. 3

    Once the pastry cream is ready, pipe lines over the batter.
    Bake at 350°F (180°C) for about 40 to 50 minutes, or until a knife inserted in the center comes out clean.

    Let cool and remove from the pan.
    For decoration, make a simple syrup (equal parts water and sugar, heated until it turns color and thickens). Brush the syrup over the torta matera and sprinkle with shredded coconut.
