This is a healthy, full of nutrients Gujarati Breakfast dish.
Curds : curds act as a great pro - biotic . It helps in digestion, makes immunity strong and promotes healthy bones .
Spinach 🥬 : keeps your body relaxed , prevents cancer , aids in bone health . Aids in weight loss & reduces hypertension.
Sesame : helps lower blood pressure, helps in good bone health, it is a good source of Vitamin B & good source of fibre .
These are a few benefits of curds , spinach & sesame. The list of their benefits is endless , so I have incorporated all 3 in my recipe to get the maximum benefits & promote well - being from it .

Soak whole moong for 6 -7 hours or overnight. Next morning drain the soaked water & grind the moong & spinach in a mixer jar

Add the soaked poha, curds, green chillies, ginger, coriander, sugar and asafoetida.Again grind to a smooth & fine paste.

Take the mixture in a bowl. Add fine sooji & oil. Whisk for 2 minutes.

Now divide the batter into 2 portions. In 1 portion add eno fruit salt & lemon juice on top of it. Whisk gently in 1 direction, till light & fluffy.

Pour the batter in a greased thali. Steam the thali for 12 -15 minutes in a hot steamer.(Heat the steamer & thali / plate in advance).Cool the dhokla a little.

Pour the hot tempering of oil, mustard seeds, sesame seeds, green chillies & curry leaves

Note : Make another plate of Moong Bean Dhokla the same way and enjoy this lovely colourful dish for breakfast or High Tea.
