Aloo anday ki bhujia

A very simple recipe for those pressed for time. Aloo Anday Ki Bhujia (scrambled eggs with potatoes) is a popular Pakistani dish made with scrambled eggs and potatoes. It is known for its simplicity and quick preparation, making it a go-to meal for many households.
This dish is not only quick and easy to prepare but also versatile, allowing for variations such as adding bell peppers or different spices based on personal preference. It is often enjoyed as a breakfast item or a light meal throughout the day.
You can enhance Aloo Anday ki Bhujia by adding a variety of vegetables to make it more nutritious and flavourful. Try adding bell peppers which add sweetness and crunch to the dish. You can use any color (green, red, yellow) for a vibrant dish. Spinach is another option, which I have never tried! Sometimes I like adding fresh or frozen peas for a pop of colour and sweetness. They cook quickly, so add them in the last few minutes.
When adding these vegetables, adjust the cooking time accordingly to ensure that everything is cooked through but not mushy. You can sauté them along with the onions or add them at different stages depending on their cooking times. This way, you can enjoy a delicious and colourful Aloo Anday ki Bhujia!
